Dinner: Mac and Cheese

We underestimated the lasting power of the food we purchased on Sunday. The chow mein was slated for 4 meals, but only last for two. The celery and carrots went quickly. The spaghetti noodles are used up. And I snacked on the last bit of my cereal today… Oh and Scott keeps eating the cheese on the side, so I’m guessing we’ll be a bit short for tonight’s dinner. I’m pretty sure at this point our meals on Saturday and Sunday would be slim pickings, if we hadn’t already decided that sticking to our budget isn’t going to be feasible with Bumbershoot.

If we were actually on food stamps, running out of food would be a bad thing. But it’s been a really good lesson for us going forward: we should eat everything that we buy. We throw away old veggies or moldy sauces from the fridge all too often. It’s such as waste.

One of Scott’s coworkers said that he buys enough food for two days and then tries to eat everything he purchased within that time frame. Anything he has left over he’ll use in the next couple of days, supplemented by whatever he buys at the grocery store to refresh his supply. This is something I’d like to adopt with Scott… along with a plan to cook at home at least twice during the work week. Then we’ll also have leftovers for lunch twice a week. I can see this saving us some cash!
